Oven Veggie Frittata

Base recipe:

 

  • 8-12 eggs (depending on how many people you're serving, how many meals you want out of it, if meal prepping, or how many add-ins you plan on using)

  • 1/3-1/2 cup of 2% milk

  • 1 tablespoon olive oil

  • Salt + Pepper

Add-in ideas:

 

Veggies*

  • fresh broccoli florets

  • fresh spinach, chopped julienne

  • Sauté 1/2 an onion, diced, and 1/2 a diced red pepper in a pan with 2 tsp olive oil and S+P, let cool

  • grated carrot

  • green onion, chopped

  • roasted red peppers, chopped

  • butternut squash**, thinly diced

Starches 

  • sweet potato**, peeled and thinly diced

  • russet potato, peeled and grated or pre-grated hashbrowns

Proteins

  • ground turkey, cooked

  • Italian chicken/turkey sausage (ground), cooked

  • turkey bacon, cooked and chopped (or 3 strips of regular bacon for flavor)

Feel free to use Italian seasoning, cumin, etc., or fresh herbs like rosemary, basil or mint.

 

Cheeses: shredded sharp cheddar, colby jack, mozzarella, parmesan, Italian cheese blend, or feta.

 
  
 

Directions:

 
  1. Wash, cook and prepare your add-ins.

  2. Preheat oven to 375.

  3. Whisk eggs with oil, milk and s+p, then set aside.

  4. Depending on how many add-ins you choose or how many eggs you use, you will need a pie dish, 8x8 glass baking pan, or 9x13 glass baking pan.

  5. Layer ingredients in this order: starch, protein, veggies, herbs, cheeses.

  6. Pour egg mixture over add-ins in your desired pan, keep covered with foil for first 30 min.

  7. Bake for 40-55 min., until egg is set (edges will be browned but shouldn't be on top).

  8. Eat immediately or keeps in fridge for about 5 days.

ground turkey + butternut squash + spinach + mozzarella + a dash of paprika 

bacon + broccoli + spinach + hashbrowns + cheddar 

Italian chicken sausage + roasted red pepper + mozz/parm + chopped fresh basil

ground turkey + sautéed onion and red pepper mix + colby jack + a dash of cumin

  

Helpful tips:

 

*Make sure to pat dry all your veggies before adding to the dish! Excess moisture is your enemy. For frozen spinach: thaw then wring out in a towel the extra water. Be sure to thaw any frozen veggies you choose to use and get as much moisture out as possible; this makes using fresh ideal.

**A tip on dicing your butternut squash or sweet potato: spiralize or (buy in spirals) then chop the spirals for the perfect size and width for this recipe! But of course, you can also dice as usual too.
